That's because it is!
For meal prep, we usually use chicken as one of our proteins and sometimes it can get a bit boring. So this week decided to experiment and boy did this recipe turn out amazing and it was super easy!
If you aren't meal prepping weekly, I highly suggest giving it a try. For our family, it just works. We have busy schedules and simply can't cook each night. So having our meals bulk prepped for the week not only makes it easy for grab and go but we know just exactly what fits in our macros!
2 lbs chicken breast
1/2 packet ranch seasoning
2 tbsp olive oil
1/4 cup chopped green onions
2 cups mozzarella cheese
5 tbsp bacon bits
Preheat oven to 420. Grease 9x13 dish with olive oil spray. Season chicken breast with ranch seasoning, sprinkle green onions and drizzle olive oil on top of each. Bake for 25 minutes then remove from oven. Sprinkle mozzarella cheese and bacon bits on top of each chicken breast. Return to oven and set to broil on high for 2-5 minutes until cheese starts to brown.
Remove from oven and allow to cool before placing into containers for meal prep. Or devour immediately, if you can resist! Enjoy!
